Observation (CORRECTED DURING INSPECTION):
- Packages of lamb legs probed at 14.5C. Operator stated they were thawed on counter over night.
Corrective Action(s):
- Products discarded. Potentially hazardous food items should not be stored in room temperature for more than 2 hours which at the point they should be used (cooked) or discarded.

Observation (CORRECTED DURING INSPECTION):
- No paper towel observed at the kitchen handsink. Soap dispenser was blocked by pans & utensils.
Corrective Action(s):
- Ensure hand sink is fully equipped with hot and cold running water, liquid soap and paper towels at all times. The handsink was equipped at the time of inspection.

- Packages of lamb legs were being thawed in room temperature over night as per the operator.

- Cashier handsink & washroom handsinks are fully equipped.
- All coolers at 4C or below.
- All freezers ranged from -13C to -24C.
- Bleach sanitizer available in buckets measured at 200ppm - ensure to mix 1 cap of bleach to a bucket full of water.
- High temperature dishwasher reached 71C or above during the final rinse.
- No signs of pest observed at the time of inspection.

* Cleaning required for cooler doors & handles. Discard old/stained containers.
