Routine inspection: kombucha production facility.

Hand sink provided with liquid soap and paper towels.
Staff washroom hand sink provided with liquid soap and paper towels.
2 compartment sink available for cleaning and sanitizing parts.
Clean in place for large tanks.
Star san used to sanitize bottle before filling and for small parts/equipment.
100ppm bleach use to sanitize work surfaces.
Walk in cooler at 3 degrees C. All bottled kombucha stored in walk in cooler.
Labels adequate. Keep refrigerated clearly on label.
pH tested at various points during production. Logs available for review.
pH meter is tested and calibrated monthly using buffer solutions of pH 4 and 7. Reminder to keep calibration records onsite and available for review.
Dry storage area clean and organized.
No evidence of pest activity noted at time of inspection.
