Follow-up inspection conducted for inspection report# KLAI- CM3TGC
200 ppm chlorine residual detected in a sanitizer container and a sanitizer spray bottle in the front of house. One of the sanitizer spray bottles was noted with a slightly higher concentration (bleach paper starting to bleach out slightly) - staff diluted that sanitizer during the inspection.
As noted in the last follow-up inspection (KLAI-CM73RZ), the high temperature dish machine has been fixed. High temperature dish machine was able to reach 71.0C at the plate level, 185F at the temperature gauge during the rinse cycle.
In general, most of the food in the walk-in cooler was stored covered. Please ensure all food not in active use are to be stored protected.
General cleanliness noted improved. Most areas that were cited requiring sanitary attention are now cleaned.
Areas still requiring attention: Behind the cookline and ceiling of the walk-in cooler.
As per operator, he works here 7 days a week and therefore does not require another employee to have FoodSafe level 1 or equivalent. In the event that the operator cannot be present everyday, operator must ensure to have another staff who is trained in FoodSafe level 1 or equivalent.

All outstanding violations will be evaluated during the next follow-up inspection.
