Observation (CORRECTED DURING INSPECTION): Staff still do not know to store raw eggs on the bottom shelf. This is a repeated violation. A Violation Ticket will be issued the next time this occurs.
Corrective Action(s): Raw eggs must be stored below and away from cooked and/or ready to eat foods.

Comments

- operator has provided evidence that kung pao sauce is shelf-stable, however the owner released the items to his staff without prior permission from the health inspector. The owner does not have authority to release products on hold. A Violation Ticket will be issued for further non-compliance
- as discussed, kung pao sauce must be refrigerated, after being properly cooled from the time it is made at your commissary kitchen in Coquitlam, until it is delivered and the whisky is added, as outlined by your lab results; alternatively, add all the whisky at your commissary kitchen. Any changes must be submitted to the undersigned, as well as the inspector for your commissary kitchen
- ice machine has been cleaned
- sauce is now stored in cooler until it is used
- rice scoop in ice water
