Observation (CORRECTED DURING INSPECTION): Yogurt is stored in ice water. However the ice level around the yogurt container was quite low. The temperature of the yogurt was around 8 degC.
Corrective Action(s): Ensure that ice is placed as high as possible all around the yogurt container with some water added in.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): The sanitizer in the red bucket is at 50pppm. The bucket is always stored inside the handsink and the sanitizer gets diluted each time the water is turned on.
Corrective Action(s): Refresh the sanitizer in the bucket (must be at 200ppm). DO NOT store the bucket inside the sink. Find another location to store the sanitizer. This is a recurring issue.

Observation (CORRECTED DURING INSPECTION): Dipper well wasn't turned on at the time of the inspection.
Corrective Action(s): Dipper well must always be on as discussed.

Observation: There's only 1 staff onsite and she did not have Foodsafe Level 1 certification.
Corrective Action(s): In the operator's absence, at least one staff on duty must have FS level 1 certification. This is also a recurring issue.

General Comments:
All coolers are below 4 degC.
Freezers are below -18 degC
Hand sink and washroom sink are fully equipped
Temperature log's being maintained. WRITE OUT THE YEAR ON THE LOGSHEET.
200ppm quats is available in the 3rd compartment of the 3-comp. sink for dishwashing purposes.

TWO OF THE INFRACTIONS CODED ARE RECURRING ISSUES. IF THIS PERSISTS, A VIOLATION TICKET WILL BE ISSUED. OPERATOR TO CALL ME TO DISCUSS THIS.
