- Hand washing stations were unobstructed and properly supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer solution available in spray bottles and from dispensers at 200 ppm
- Three-compartment sink maintained in sanitary condition and sink plugs were available
- Walk-in cooler measured to be at 4C. Raw poultry walk-in cooler measured to be at 2C
- All prep coolers and inserts measured to be at 4C or colder
- Hot holding cases were measured to be above 60C. Hot foods held in cases for 2 hours.
- Upright freezer measured at -20C. **Ensure to clean inside freezer on a regular basis.
- Buffet self-serve area: Maintained in sanitary conditions. Hot food measured to be at 60C or hotter. Cold food measured to be at 4C or colder. Food held at buffet station for 4 hours.
- Food storage practices satisfactory. General sanitation satisfactory.
- Temperature records well maintained and up to date. Accurate thermometers available.
- Pest control in place, no signs of pest activity noted at time of inspection.
