Observation: Cook making foods and roasts during the inspection.
Quat sanitizer between 0-50ppm QUAT from 2 spray bottles and from dispenser on the wall. No other sanitizer available in the facility. No bleach bottles available.
Corrective Action(s): Please pick up some bleach and make sanitizer according to Fraser Health Food Safe instructions for mixing. Or as per bottle label for 100ppm.
Have your contractor adjust Quat dispenser to be at minimum 200ppm Quat.
Please use to clean slicer after use, prep table cutting boards and other food contact surfaces especially making raw meats and seafoods.
Recommend separate cutting boards for raw meats and other items such as salads.

Observation: Large and small rodent droppings evident in dry storage area in the basement in corners.
Doors in facility are fairly well sealed.
Corrective Action(s): Please clean and sanitize corners, basement and behind equipment, anywhere where rodent droppings may be found.
Monitor to see if problem reoccurs.
Call a pest control contractor and have one on call regularly for inspections, setting up traps, etc.

Observation: Kitchen floor is greasy.
Basement is in need of cleaning and scrubbing.
Cutting boards are in need of bleaching, cleaning and or replacing. Grooves with dark stains, indicating mold growth.
Corrective Action(s): Please use a good degreaser (available) for the floors.
Clean all areas including the corners and basement.
Clean or replace cutting boards or use the second one on the new cooler.

Line prep cooler <4C. Please continue to keep lid closed when not actively preparing to maintain temperature. Recommend to use second, newer line cooler as this seems to be colder and keep items cooler despite open and close of top. Bottom items are covered and protected and <4C.
Walk in cooler <4C.
Basement freezers <-18C.
Dishwasher 50-100ppm Chlorine.
Storage of chemicals and food items including dried goods is separated, thank you.
Front end server counter is reasonably clean and organized.
Kitchen is relatively organized.
Bathrooms are clean and in good repair.
