Observation: Various items are stored in open containers and not protected from contamination.
Raw meat stored above uncovered ready to eat, cooked meat and other uncovered items.
Raw meat stored above uncovered sauces.
Raw meat stored above raw seafood.
Corrective Action(s): Store seafood above meat.
Store cooked items and ready to eat items above raw foods.
Organize the fridge.
Cover items with food grade wraps or lids.
Operator organized some items (moved raw meats to below during the inspection, other items still need organization and protection).

Observation: Large and small rodent droppings evident in dry storage area in the basement in corners.
Doors in facility are fairly well sealed.
Corrective Action(s): Please clean and sanitize corners, basement and behind equipment, anywhere where rodent droppings may be found.
Monitor to see if problem reoccurs.
Call a pest control contractor and have one on call regularly for inspections, setting up traps, etc.

Observation: Kitchen floor is greasy.
Basement is in need of cleaning and scrubbing.
Cutting boards are in need of bleaching, cleaning and or replacing. Grooves with dark stains, indicating mold growth.
Corrective Action(s): Please use a good degreaser (available) for the floors.
Clean all areas including the corners and basement.
Clean or replace cutting boards or use the second one on the new cooler.
