302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: A) Dishwasher sanitizing cycle not working. Significant chemical crystalization around dosing pump, along top of unit and at point of discharge observed. Wash cycle works.
B) Work surface, table and countertop sanitizing processes not acceptable. Use of vinegar not acceptable for sanitizing purposes. Quats and bleach available, but not in use.
Corrective Action(s): A) Immediately implement a manual dish sanitizing process following below (**) instructions. Repair dishwasher within 10 days or by re-inspection date noted on report.
** Fill designated sink with 2 three gallon = 6 gallon buckets of water and add 2 ounces of bleach to obtain 100 ppm solution. Allow 2 minutes contact time and air dry.
B) Use designated quats at full strength in cloth bucket and change regularly (2 hours typical) for surface sanitizing. Allow 1 minute contact time to environment.
ALT: Bleach water solution at 1/2 teaspoon to one litre of water will achieve 100 ppm solution.
**bleach in short supply and must be purchased today to ensure proper sanitizing of dishes etc. is maintained.
Above work must be completed and process in place by follow up inspection date noted on report.

Cooling unit temperatures less than 4 C. OK. Recommend display cooler get defrosted at a more regular interval (needed).

Discussed clogged handsink at prep station. In process of being repaired. Review at follow up inspection date.
