Observation (CORRECTED DURING INSPECTION): No sanitizer available for food prep area in kitchen. When asked, staff had brought a spray bottle with 0ppm chlorine. 200ppm chlorine solution was prepared in the bottle at this time.
Corrective Action(s): 100-200ppm chlorine solution MUST be available for use AT ALL TIMES. All food prep surfaces MUST be sanitized before initiating any food prep, after each possible contamination and every 2 hours during operation of the kitchen. Correction Order issued at this time.

Observation (CORRECTED DURING INSPECTION): Two of the three dishwashing racks filled with raw fish fillets were placed above the conveyor belt and one was placed above garbage can for prep. All transferred to food grade containers and moved to the kitchen at this time. Pictures taken.
Corrective Action(s): Food must be contained in food grade materials ONLY. DO NOT use dishwashing rack to store food. NO FOOD PREP OR STORAGE IS ALLOWED TO OCCUR IN THE DISHWASHING AREA. Correction Order issued at this time.

Follow-up inspection conducted for glasswasher only:

Glaswasher was repaired by a technician yesterday. Banquet hall to be in use for an event tonight.
-Low temperature glasswasher for the bar achieved >50ppm chlorine at the plate level after final rinse.
NOTE: Ensure the minimum level of chlorine is achieved at the plate level after each rinse cycle. Check using the test strips on a regular basis.

As discussed previously, another follow-up inspection will be conducted on Monday, July 29, 2019. All infractions observed during the routine inspection (Jul 16, 2019) must be in compliance during the follow-up inspection, including submission of the updated floorplan for the front bar.


After checking the glasswasher at the front bar, health inspector walked into the kitchen to speak with the chef and observed the above violations. Correction Order was issued at this time. Failure to comply with this Health Order and/or repeated violations during the future routine inspection WILL result in further enforcement action (i.e. issuance of Violation Ticket(s) - one for the violation, and one for not complying with Health Order).
