-Prep cooler is at 4 degC
-Discussed sushi safety with the operator and the manager. Salmon is purchased from Shabin Seafood & Restaurant Supply (Manna). The receipt doesn't indicated that the salmon is sushi grade. Spoke with the vendor and they verified that the salmon is sushi grade.
