Observation (CORRECTED DURING INSPECTION): One bucket of quats sanitizer with wiping cloths at 50 ppm (2 compartment sink). Sanitizer was changed at time of inspection and measured 200 ppm quats. Please ensure quats sanitizer is changed on a regular basis or when solution becomes soiled to maintain effective sanitizing concentrations (200 ppm quats).

Routine inspection conducted:

Main Kitchen
- Walk in cooler at 3 degrees C. Food is safely organized, covered, and stored off the floor.
- Walk in freezer at -18 degrees C.
- Thermometers available for cold holding units. Functional NSF probe thermometers available for internal temperature checks.
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- High temperature dishwasher measured 80 degrees C at utensil surface during final rinse (minimum 71 degrees C).
- Quats available from dispensers and in labelled buckets at 200 ppm to 400 ppm quats. Note: One bucket at 50 ppm quats.
- Equipment and utensils in sanitary condition.
- Dry storage well organized
- HAACP temperature log up-to-date
- No evidence of pest activity noted

Servery
- Domestic cooler at 4 degrees C. Thermometer available.
- Hand washing station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Ice machine sanitary. Scoop stored safely in clean container.
