Observation (CORRECTED DURING INSPECTION): All equipment and utensils that were cleaned and sanitized using the dishwasher today have not been adequately sanitized as no chlorine residual was detected at time of inspection. Test strips on site verified lack of residual.

- All previously cleaned and sanitized items must be sanitized again by manual method. Reviewed with operator and staff on site manual warewashing method using 3 compartment sink - no concerns.

Observation (CORRECTED DURING INSPECTION): Bowl of samosa mix on shelf in walk-in cooler was left uncovered.

- Mix was covered during inspection.
- Ensure all foods placed in storage are covered to protect from contamination.

Observation: 0ppm chlorine residual detected from chemical dishwasher even after several runs. Low amount of sanitizer solution remained in the jug with no extras in storage.
Corrective Action(s): - Operator to order more sanitizer immediately and contact repairman to service as soon as possible. Dishwasher must be able to provide 50-100ppm chlorine residual.

- Handsinks supplied with hot+cold water, liquid soap and paper towels.
- 100ppm bleach solution available in buckets and spray bottles throughout the kitchen.
**Ensure the solution is remade as often as it becomes soiled to maintain 100-200ppm chlorine.
- Reviewed cooling practices and records with operator and staff. No concerns - continue to monitor time/temperature and update records.
- Reviewed thawing practices for frozen foods. No concerns - items are thawed overnight in walk-in cooler for use the next day.
- All staff observed to be donning hair nets and practicing hand hygiene.
- Dry storage is satisfactory. All items are stored off the floor.
- General sanitation satisfactory. Monitor cook and prep areas to minimize excessive buildup of food debris or grease throughout normal operation.
- Vent hood was last serviced in June 2020. Did not appear greasy or in immediate need of service.
- No signs of pests at time of inspection.
- Pest control devices noted on site. Services are provided by Orkin. Last report dated June 24, 2021 was reviewed on site with no concerns.
- FOODSAFE certified staff on site.
- Health permit posted in conspicuous location.
