Observation (CORRECTED DURING INSPECTION): Produce cutting room:
Detergent and sanitizer feeder system turned off due to plumbing leak.
2 compartment sink for utensil washing is missing both plugs to allow staff to properly fill sinks to practice correct manual dishwashing of food equipment.
Corrective Action(s): Detergent / sanitizer feeder system turned on during inspection.

Food equipment, food utensils and clean in place food contact surfaces must be manually cleaned and sanitized following the 4 step method;
1)clean surface of debris using warm water and detergent,
2)rinse surface with warm water,
3)immerse for 2 minutes in 200 ppm Quaternary Ammonia sanitizer
4)allow surface of item to air dry before next use.

Observation: Back of house:
Meat scraps on floor in back warehouse corridor across from Meat dept. walk-in cooler.
Mouse droppings on palletes and floor guard rails in warehouse corridor from receiving entrance extending to seafood dept.
Food and debris collecting on floor by both sides of produce walk-in cooler compressor and left corner under plastic pallet of receiving entrance.

Retail area:
Aisle #12 - lower shelf, bagged rice section - mouse droppings at back of shelf behind rice bags.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
