Comments

- Cold brew bottling room:
- Room is used for processing cold brew, iced tea and almond and hazelnut milk
- Area and equipment maintained in sanitary condition
- Hot and cold running water, liquid soap and paper towel present at 2 compartment sink
- Cooler (where nuts stored) 2C
- Reviewed cleaning and sanitizing procedures for surfaces and equipment. Procedures present on-site at time of inspection. No changes since previous routine inspection
- Quats sanitizer (Nova San premix) used to sanitize counters/surfaces. Concentration 200 ppm
- Quats sanitizer (F29 concentrate) used to sanitize food equipment (emulsifier for almond and hazelnut milk, and bottle filling machine for iced tea and cold brew).
- Nova Teck hydrogen peroxide used for bottle rinsing
- Nuts for nut milk are soaked in the walk-in cooler

- Back Roasting area:
- Handsink present at entrance to roasting area. Liquid soap and paper towel present for handwashing
- Roasting/storage area clean and well maintained/organized.
- Walk-in cooler was 4C. Cold brew, iced tea, nut milks and nuts (when soaking) stored in walk-in cooler
- Sliding door cooler 4C
- No signs of pest activity noted.
- Roasters equipped with de-stoning equipment (to remove stones). Earth magnet used to remove foreign objects.

- Upstairs cupping area:
- Used for tasting/testing coffee. Not for service to the public
- Liquid soap and paper towel present for handwashing
- High temperature dishwasher met sanitizing temperature required. Final rinse was 73.7C

*Recommend painting/sealing unsealed wooden shelving where bins of beans are stored.
