Observation: Observed gaps around back doors where pests can possibly enter through. Most pest report also indicated the same concern.

Observation: Observed significant accumulation of grease and food debris below and behind cooking equipment. Similar situation also noted around the prep line cooler.

Discussed clean and sanitizing steps for meat slicer; parts taken apart and run them through the dishwasher. Use QUAT sanitizer on parts that cannot be disassembled.
