Observation: - Mouse droppings present on floor near grease trap in the back area of premises.
Corrective Action(s):
- Clean up droppings and disinfect area of floor. Maintain a high level of sanitation.
- Continue to monitor for any further rodent activity. If any additional droppings are present, clean up immediately.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: - Holes/openings present in wall around plumbing pipes near greasetrap have been covered with cardboard and tape. These materials are not suitable to exclude pests.
Corrective Action(s): - Remove cardboard/tape from wall and repair wall or cover opening with suitable material to exclude pests (eg. metal plate) and that has a smooth and washable surface. To be corrected by: 22-Jul-2022.

Comments

- Food premises maintained in sanitary condition. Some food debris noted in hard to reach areas under equipment. Ensure equipment is regularly pulled out and floor thoroughly cleaned to prevent any accumulation of food debris which may attract pests.
- Handsinks in front service area and back prep/dishwashing area were supplied with hot and cold water, liquid soap and paper towel. Observed frequent handwashing by Operators and staff.
- Staff/public washroom maintained with liquid soap and air dryer for handwashing
- Coolers were operating at required temperature (4C or colder):
- 2 door worktop cooler 2C
- 3 door reach in cooler 2C
- Freezers were maintaining food products in a frozen state.
- Display freezers -19C, -20C
- 3 door reach in freezer -22C
- Blast freezer -34C
- Retail freezer -20C
- In use wiping cloths were stored in bleach sanitizer solution (100ppm chlorine)
- Manual dishwashing in place. Bleach sanitizer solution present in sink for sanitizing step. Concentration measured 100ppm chlorine.
- Reviewed cleaning and sanitizing procedures for ice cream machine with Operators. Machine is cleaned and sanitized daily. Instructions are present on ice cream machine. Ensure these procedures are followed and frequency of cleaning and sanitizing is completed according to the sanitation procedures.
- Dipper well operational and in use for ice cream scoops.
- Pest control contract is in place with monthly service. Viewed report from most recent service (13-Jul-2022).
- Foodsafe requirement met at the time of the inspection. Operators present and both have valid Foodsafe level 1 certificates.

Observations and corrective actions reviewed with Operators and a copy of the report was provided.
