Observation: (1) Display cooler L cannot maintain <4°C, operator has stopped using this cooler.
(2) Display cooler N has been observed to fluctuate between 4°C to 7°C, operator has removed items to monitor temperature.
Corrective Action(s): (1) Operator has ordered a new display cooler that will arrive in 2 weeks. Instructed to call for inspection when cooler has been installed and ready to be used. To Be Corrected By May 13, 2021.
(2) Keep monitoring the cooler and service the cooler if needed. Do not store PHFs in this cooler until it can maintain < 4°C. To Be Corrected By May 13, 2021

Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: (1) Display coolers are observed at 7 - 9°C (L and N).
-Temperature logs show temperatures at around 11°C.
-Cakes and pies are stored there and are potentially hazardous.
(2) Vegetable cooler at 11°C and are storing cold potentially hazardous foods (sauces).
(3) Eggs, butter, cream cheese observed stored at room temperature, staff says it has been out for 3.5 hours.
Correction: (1) Please fix or replace coolers to be able to maintain < 4°C.
(2) Please move the hazardous foods to another cooler.
(3) Please use immediately or discard at 4 hours. Take out less ingredients to use up faster.

Follow-up inspection to last routine inspection.

-Operator has removed PHFs from the display coolers to the back stand-up coolers
-Operator has removed items from cooler N as she monitors the temperature of cooler.
-Staff has been educated to not store PHFs at room temperature
-PHFs in vegetable coolers observed in last inspection, has been moved to another cooler that can maintain < 4°C.
