Observation: OBSERVATION
Mouse droppings on the floor at the equipment storage area was
not cleaned and sanitized. Operator stated that they would do
a deep cleaning at the storage area on May 15, 2023 (Monday)

Comments

Things corrected :
1.) Raw eggs, liquid eggs and other potentially hazardous foods
were being stored inside the under the counter cooler infront of
the ice bath station. Some items were still being stored on the
ice bath such as bell pepper slices, deli meat, and shredded cheese.
However, stickers were updated and the noted items are being changed
every 2 hours.
2.) No flies observed in the areas noted in the inspection report
#260749. General sanitation improved.
3.) Huge hole in the dry storage area was covered with
grates to accomodate air circulation.
4.) Dust and cobweb accumulations were removed in the
corner of the cook line.
5.) New dish racks were available. 3 dish racks were noted.
Operator stated that 4 more dish racks are coming.
6.) Wall behind the door in the dry storage room was
repaired and finish is easily cleanable.
7.) Walls in the office, which had tape, was replaced.

Things to be corrected :
1.) Small holes on the ceiling of chemical storage room must be sealed.
Operator stated that new ceiling tile is coming and it will be
replaced on May 15th , 2023.
2.) Ceiling tiles in staff room and dishwashing area must be fixed.
Operator stated that it will be replaced on May 15th , 2023 as well.
3.) Wooden shelves were still damaged. Ensure to repair and
repaint to accomodate cleaning. Operator stated that it will
be also changed and repainted on May 15th. Metal steel will be installed
on the wooden shelve's edges.
* Operator stated that the light bulb near the office will be
replaced as well. Light bulb was not working at the time of
inspection.
