Observation: Walk-in cooler: A tray of spinach rolls were found stored underneath trays of raw meats and poultry.
Corrective Action(s): Ensure that all vegetables and ready to eat food items are ALWAYS stored above any raw meats/poultry or fish to prevent chances of cross contamination. ( Immediately).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Prep cooler ( deli cooler) in the front preparation area registered 11-12 degrees C. Too warm. All sandwiches and potentially hazardous foods were transferred to anoother at the time of inspection.
Corrective Action(s): Repair or service the cooler as necessary to ensure it maintains all food items at or below 4 degrees C ( 40 F). Do not store any Potentially hazardous food such as deli meats or cheeeses untill the cooler is fixed and maintaining 4 C or less.

Comments

* Temperature entries were not recorded for Feb. 19th and 20th. Ensure to monitor and record all equipment temperatures every day.
* Recommended providing protective shatter-proof sleeves on the tube lights in the linen/utensils storage room.
* Ensure that all chemicals are stored in accurately labelled spray bottles. (e.g, Ostro san sanitizer was found stored in a bottle labelled "Vert Go" disinfectant.

Walk-in freezer < -18 C.
Upright cooler (front serving area) < 4 C.
Under-counter refrigerator < 4 C.
Hot holding of soups > 60 C.
Dishwasher final rinse: 74 C at the plate surface
Quats sanitizer ( Ostro san) tested 150-200 ppm. Consider calibrating the dispenser to ensure it dispenses 200 ppm.
General sanitation is satisfactory.
Dishwasher final rinse logs are up to date.
