Observation (CORRECTED DURING INSPECTION): Large garbage bin is found again stored right next to dishwashing sink, blocking access to back handwashing station. In addition, a used knife is placed inside handsink.
Corrective Action(s): Handwashing stations must be clear of items and accessible at all times.

Comments

The following items have been observed:
-->Front salad/sauce cooler is fixed - temperature of cooler is now measured at 3.2oC.
-->No pizza toppings observed at room temperature.
-->All products now stored at least 6 inches above ground.
-->Open bags of dry goods have been transferred to food grade containers.
-->Call has been made to seal the hole under dishwashing sinks.
-->Areas required cleaning are now in sanitary condition.

Note:
Reviewed facility file with manager. When facility first approved the floor plan indicated a pizza oven, side plating station, a handwashing station, and a cooler at the front preparation area. Operator has since added a pizza prep cooler and a work table, which are both placed next to the front handwashing station. While an additional pizza prep cooler is needed for this operation, it is placed in front of the handsink, making it difficult to wash hands conveniently. Pizza prep cooler can remain in its location, as long as both sides of the handwashing station is unobstructed. Remove/relocate small table.
