Observation: Front display cooler ambient air temperature was at 8C, food product was probed and was 7C internally. All food moved to alternate display cooler during inspection. All food must be kept at 4C or less at all times

Observation: Weather stripping under large bay door closest to dry storage shelving appeared to be chewed through by rodents and has left a gap where mice could be getting in. Owner stated she will temporarily patch up the hole today.
Corrective Action(s): Replace weather stripping under the bay door with a more durable, pest resistant material. Due: 1 week.

Observation: Two additional bait boxes found inside premise, one under electrical panel and one under dry storage shelving next to office. Other bait box observed during last inspection has been removed.
Corrective Action(s): Have all bait boxes removed from inside premise. Bait boxes must only be used *outside* as bait is highly toxic and could be transferred onto food contact surfaces by rodents. Due: today

General Observations:
- Walk in cooler is scheduled for repair within a few hours, no potentially hazardous foods are currently stored in unit. Correction order issued to limit menu for food preparation to exclude fresh sandwiches until both walk in and display coolers are repaired.
- Some rodent droppings missed during cleaning under dry storage area next to office - give this area a deep clean removing all droppings and sanitize area afterwards. Due: today
