Observation (CORRECTED DURING INSPECTION): The downstairs produce cooler was above 4 degrees C internally.
Corrective Action(s): Ensure the cooler is maintained at 4 degrees C or colder. The cooler temperature was adjusted to 3.9 degrees C.

310 - Single use containers & utensils are used more than once [s. 20]
Observation: Yogurt and margarine containers were being reused to store other food items. The owner mentioned over telephone that they have some food grade reusable containers available on-site and will slowly phase out all of the single-use yogurt/margarine containers.
Corrective Action(s): Ensure food is stored in durable food grade containers that are intended by the manufacturer for reuse and that can be washed repetitively through the dishwasher. Correct in 1 months time.

Comments

Permit to operate was posted in a conspicuous location.
Liquid soap, hot and cold running water, and paper towels were available at the handsink.
Coolers in the kitchen and downstairs shed were 4 degrees C (40 degrees F) or colder.
Freezer temperatures ranged between -14 degrees C and -18 degrees C. Ensure that all freezers return to -18 degrees C if they are on a defrost cycle.
High temperature dishwasher was 71 degrees C or hotter at the plate.
Refrigeration temperature and dishwasher final rinse temperatures were being maintained.
Dry storage cabinets were clean and organized.
100 ppm chlorine sanitizer was available in the spray bottle. It was mentioned that fresh chlorine sanitizer is set up in the spray bottle on a daily basis.
No signs of recent pest activity were observed at the time of inspection.
