Observation (CORRECTED DURING INSPECTION): All foods in hot holding units had not been re-heated in oven prior to placing into hot holding units. All food items including: Chicken, mashed potatoes, Cooked rice were re-heated in hot holding units. CORRECTED DURING INSPECTION: All food items removed from hot holding units and re-cooked in oven.
Oven had been malfunctioning due to a drainage issue and staff placed food in hot holding units to try to re-heat items.

Corrective Action(s): UNACCEPTABLE PRACTICE.
This is NEVER to occur again. This is extremely dangerous as food was being re-heated very slowly at temperatures low enough to enable bacterial growth.
Go over proper re-heating procedures with staff to ensure this does not happen again.
