Routine inspection conducted. Area is generally maintained in good sanitary condition. The following observations were made:

- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Walk-in cooler at 1C (temperature logs were not maintained recently, nor dispenser / sanitizer logs. This must be done on a daily basis!)
- Display cooler at 1C
- Reach-in cooler at 4C or less
- Chicken rotisserie hot-holder at >= 60C. As noted, you are to record and log the temperature of the chicken every 2 hours with a probe thermometer (thickest part of chicken).
- Sanitizer dispenser releases 200 ppm QUATS at point of dispensation
- QUATS spray bottle available at 200 ppm
- 3-compartment sink is set up for washing, rinsing, and sanitizing. Third compartment contains 200 ppm QUATS
- All products are stored off the floor
- Worker at deli states that the meat slicer is routinely disassembled throughout the day (> every 4 hours). Remember that you must properly disassemble the device during the sanitizing process (not just a quick wipe)
- Sanitation procedures and checklist are available for review

*WARNING: WORKSAFE ISSUE: Worker stated that the machine is left running while being cleaned with sanitizer. DO NOT DO THIS* You must DISASSEMBLE the device prior to cleaning and sanitizing. Disassembly instructions were reviewed with the worker at time of inspection.
