Observation: 1. Do not store potentially hazardous foods at room temperature (ie delux pizza bread, coconut cream pastries) Discard. Correction Date: Immediately.
2. Display cooler and deli case had food 5-8.5 deg. C. Record temperature logs indicate consistent readings above 4 deg. C for at least 6 days. Discard all potentially hazardous foods. Correction Date: Immediately

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. 2 of 4 sanitizer bottles noted at 50-100 ppm QUATS
2. Sanitizer hose was separated from dispenser and sitting in 3 comp sink
3. 1 of 4 sanitizer bottles noted as "detergent" with sanitizer in bottle.
-Sanitizer test strips available
Correction: 1. Ensure all sanitizer bottles are maintained at 200 ppm QUATS to provide adequate sanitizer to food contact surfaces.
2. Sanitizer dispenser must be ready and available to refill sanitizer bottles and sink compartment during manual dishwashing.
Ensure sanitizer is operating properly and sanitizer bottles are maintained at 200 ppm QUATS - verify with test strips. Operator indicates the sanitizer bottles are suppose to be refilled every morning.
3. Ensure all chemical containers are properly labelled with "sanitizer". Get proper chemical labels from supplier.

Follow-up inspection to report #ZDER-BFHSVE
-Hot holding cooked chicken griddle not in use during inspection - part have been ordered. Operator will not use unit until unit is functioning properly
-All cooked whole chickens are hot held in upper hot holding unit - noted at 81 C
*Correction Order Rescinded

-Sanitizer bottles are labelled "sanitizer" through out facility and noted at 200 ppm QUATS.
*Test strips available for testing concentration of room temp sanitizer solution.

-New dairy cooler purchased and in place of old unit. Unit currently not in use during inspection.
-New seal installed around door of Deli Oven - no mess noted around door or under unit.

Required correction:
*Dispenser noted at >200 ppm QUATS and water is still very hot. Technician will be replacing unit and hoses.
