Walk in cooler at or below 4 degrees C. Walk in freezer at -17 degrees C. Retail area freezers at -12 to -14 degrees C. Retail area cooler at 3 degrees C. Packaged fish placed in ice bath in retail area at or below 4 degrees C. At this time no self dispensing of shellfish. All shellfish is prepackaged then placed in an ice bath at or below 4 degrees C.
