Observation (CORRECTED DURING INSPECTION): Raw eggs stored on the shelf on top of produce in the walk-in cooler.
Corrective Action(s): **Issue corrected at the time of inspection** Raw eggs were moved to a lower shelf. Reminder to always have vegetable and cooked/ ready-to-eat food on the top shelves and away from raw meat and raw eggs to avoid potential contamination of food.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Mouse droppings noted on the floor below the dishwashing and prep table near that area.
Corrective Action(s): As per operator, they did have a pest issue awhile ago and believe that it has been resolved. Please sweep, clean and sanitize any areas noted with droppings. Monitor the areas for reoccuring droppings to determine if the pest issue has actually been resolved.

Routine inspection conducted today:
Handwash stations, including washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
Gravy was being hot held at over 60C.
Bleach sanitizer spray bottle was prepared. 200 PPM chlorine residual detected.
General sanitization and organization satisfactory.
Drain plugs available for manual warewashing. Please be sure to use it in order to fill the sink with sanitizer and submerging cleaned dishwares in the sanitizer solution prior to air drying.
Operator's FOODSAFE level 1 certificate still valid - expiry date July 28, 2023 - please renew before expiry date.
