Observation (CORRECTED DURING INSPECTION): One piece of onion was beginning to accumulate mould.
Corrective Action(s): Onion discarded at time of inspection. You must check your supplies upon delivery to ensure that they are in good condition. Consumption of mouldy products may result in gastrointestinal illness.

Observation (CORRECTED DURING INSPECTION): Cut vegetables and tomatoes inside prep cooler, as well as butter stored in bottom compartment, varied from 6-10C.
Corrective Action(s): Discarded at time of inspection. Cooler was emptied. Do not use prep cooler until it can maintain an ambient temperature of 4C or less.

Observation (CORRECTED DURING INSPECTION): 1. Dough mixer bowl has not been properly cleaned and sanitized, with traces of flour inside.
2. Low-temperature dishwasher did not contain any chlorine residual at beginning of inspection.
Corrective Action(s): 1. Dough mixer bowl was cleaned and sanitized at time of inspection.
2. Low-temperature dishwasher was primed and the stock chlorine solution was changed. Chlorine residual read 50 ppm at the plate afterwards.

Observation (CORRECTED DURING INSPECTION): Paper towels by hand wash station were depleted.
Corrective Action(s): Paper towels were replaced at time of inspection. Always check the hand wash station to ensure it has adequate paper towels for use.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Some products in the walk-in freezer, including chickpeas and meats, were still left uncovered at time of inspection.
Corrective Action(s): The aforementioned trays were covered at time of inspection. This is a repeat violation. You must cover all products to protect them from contamination. This is also especially important in your entire facility, as you still have an ongoing pest infestation.

304 - Premises not free of pests [s. 26(a)]
Observation: No rodents observed inside newly set mechanical traps. However, the number of droppings has increased in quantity underneath the stairwell and along the window ledge. Furthermore, droppings were observed in the dry storage area and in the mop sink.
Corrective Action(s): Remove all rodent droppings with 1 part water, 9 parts bleach solution and saturate for 15-20 minutes. Continue to contact your professional pest control company to assess for any entry points (some holes are already sealed - good). Maintain a higher standard of sanitation in your facility. An elevation in your rodent activity may culminate in a closure order.

Observation (CORRECTED DURING INSPECTION): 1. Low-temperature dishwasher did not dispense any chlorine residual.
2. Prep cooler at 8-10C.
Corrective Action(s): 1. Dishwasher was primed, chlorine solution changed, and displayed 50 ppm chlorine residual at time of inspection. Always check your dishwasher DAILY to ensure that it is in proper functioning order. This is a repeat issue - further infractions will result in additional progressive enforcement, including correction orders and/or violation tickets.
2. Service the prep cooler so that it can maintain 4C or less. Do not use the prep cooler until a follow-up inspection has been conducted to verify this.
