Observation:
At 2-compartment sink, the pipes for the "Wash" knob and "Sanitize" knob are flipped so that the sanitizer comes out when the Wash knob is turned on, and the detergent comes out when the Sanitize knob is turned on.

Person in charge was aware of the issue and informed that corrective actions have been requested.
Corrective Action(s):
Ensure the correct chemical/detergent is dispensing out of the correctly labeled knob/pipe. The detergent needs to dispense when the "Wash" knob is turned on, and the sanitizer needs to dispense when the "Sanitize" knob is turned on.

Routine Inspection:
Front Area:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- All under-counter coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- QUAT sanitizer in all buckets = 200ppm. Wiping rags stored in sanitizer solution - very good.
- All food products covered and protected from contamination.

Back Area:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- After first attempt, high temperature dishwasher sanitizing with 78.9 degrees Celsius at dish level for final rinse
- QUAT sanitizer at 2-compartment sink dispenser = >200 ppm.
- 2-door cooler maintained below 4 degrees Celsius (40 degrees Fahrenheit).
- 2-door freezer maintained below -18 degrees Celsius (0 degrees Fahrenheit).
- Dry storage area well organized.
- All food products stored at least 6 inches off the floor.
- Ice machine maintained in sanitary condition. Ice scoop stored in designated container.

Overall:
- Overall cleanliness and maintenance very good.
- No signs of any pest activity at the time of inspection.
- Premises well lit.
