Observation (CORRECTED DURING INSPECTION): 1) Dishwasher in dish pit was not dispensing sanitizer (0 ppm chlorine detected at dish level)
2) Glasswasher located at bar was not dispensing sanitizer (0 ppm chlorine detected at dish level)
Corrective Action(s): 1) After priming sanitizer line, 200 ppm chlorine was detected after final rinse
2) After replacing sanitizer supply bottle, 100 ppm chlorine was detected after final rinse

**Ensure to check all dishwashers daily prior to running dishware/glassware through.

Comments

- High-temperature glasswasher located in dish pit reached 76C during rinse cycle
- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer available at 200 ppm in all spray bottles and from main dispenser
- All coolers, including inserts, were at or below 4C
- All freezer temperatures satisfactory
- Hot held food items were above 60C
- Utensils were held in ice water in between uses; changed hourly - good
- Food storage practices satisfactory - all food stored covered and off the floor
- Ice machine maintained in sanitary condition
- Pest control is in place, no signs of pest activity noted at time of inspection
- General sanitation is good

**Ensure walk-in cooler fans are cleaned
