general sanitation is excellent freezer measures less than -18C cooler measures less than 4C Handsinks are supplied with soap and paper towels Dishwasher reached 70.3C at plate surface. Discussed that dishwasher is only used twice per year for special events; hot water tank is turned down lower for safety because it services a school. For the handful of special events throughout the year that actually use the dishwasher, please turn the hot water tank up several degrees for the day.
