Observation (CORRECTED DURING INSPECTION): Noted a large volume of sauce were left out at room temperature. The temperature of the food was @ 75oC.
Corrective Action(s): The operator stated that they cool the sauce at room temperature for 2-3 hours then transport in a cooler.
This will not acheive a proper cooling of food.
Use the ice water bath cooling method. Directed the operator to fill a prep sink with ice water.

Observation (CORRECTED DURING INSPECTION): Noted foods in the display hot holding table were ranged from 55-60oC. Noted 5 food trays were double stacked.
Corrective Action(s): Do not double stact the food trays since this may prevent keeping the hot holding temperature @ 60oC or above.
All double stacked items were removed during inspection.

Observation (CORRECTED DURING INSPECTION): Noted green beans were being washed in the handsink basin.
Corrective Action(s): The hand sink is only for handwashing purpose. Do not wash or prepare any food in the handsink.
