Observation (CORRECTED DURING INSPECTION): The following equipment was observed with dried on food debris:
1. Rotating slicer
2. Vegetable chopper
It was stated that the above-noted equipment is used in the morning and cleaned in the evening.
Corrective Action(s): Above-noted equipment was taken apart, washed, rinsed, and sanitized at time of inspection. Ensure that all equipment / utensils / food contact surfaces are properly washed, rinsed, and sanitized immediately after use. Food debris on equipment may (1) potentially contaminate food, and (2) potentially attract pest activity. Ensure all staff are aware of this requirement and staff cleaning duties are assigned accordingly to ensure equipment is cleaned immediately after each use. Repeat violations may result in further enforcement action.

Observation (CORRECTED DURING INSPECTION): The following was observed:
1. Five pizza pans were located within the back area hand sink. A large rolling table was located in front of the back area hand sink.
2. No liquid soap and no paper towels were available for back area hand sink.
Corrective Action(s): Obstructing items (pans, table) removed from hand sink area. Pans were placed into three compartment sink to be washed, rinsed, and sanitized. Liquid hand soap and paper towels were provided. Ensure that all designated hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels at all times to facilitate proper hand washing. Further repeat violations may result in enforcement action.

Observation: One or two flies observed within the premises.
Corrective Action(s): Ensure measures are taken to reduce pest populations, such as limiting pest entry. Contact a licenced pest control operator if pest populations cannot be reduced effectively. Date to be corrected by: Today and ongoing.

Observation: 1. Back door was observed to be open at start of inspection. It was stated that back door was left open to allow for cool air to enter the premises. *CORRECTED*
2. Food debris observed along floor to wall junction located along preparation line.
Corrective Action(s): 1. Back door was closed during the inspection. Ensure that back door either remains closed or an appropriate, proper fitting screen door is in place to prevent the potential entry of pests such as flies and/or rodents.
2. Ensure all food debris is properly cleaned. Food debris may attract pest activity. Date to be corrected by: Today.

- Thermometers available for cold holding units
- Quaternary ammonium compounds (quats) sanitizer available from dispenser at three compartment sink and in labeled spray bottle at 200 ppm quats
- Built in drain plugs available for three compartment sink.
- Probe thermometer available on site for internal temperature checks
- FOODSAFE requirements met at time of inspection. Certificate produced by staff member on site expires in 2020.
- Washroom hand sink adequately supplied
- Permit posted at front
Notes:
1. Reminder to close preparation table covers when preparation table is not in use.
2. Boxes/packaged food items observed to be stored directly on the ground in back storage area. Reminder to keep items off the ground to facilitate cleaning. Back storage area requires organization.
