Observation (CORRECTED DURING INSPECTION):
Temperature of bacon stored in ice well probed 48.2 degrees Fahrenheit. Staff informed the bacon had been taken out of the walk-in cooler since about 10am.
Corrective Action(s):
Immediately discard the bacon. Ensure to store potentially hazardous foods in properly functioning coolers, or time track how long the food has been placed on the ice well.

Observation:
- Bottom shelves of all freezers (walk-in, glass door, 2-door, etc.) require cleaning.
- Unsanitary knife and tools stored in chill area.
- Mould present on ceiling of larger walk-in cooler.
- Shelves of larger walk-in cooler have accumulation of grime.
- Large ball of mould growing in one of the chill area containers.
- Baffles of ventilation canopy have grease buildup.
Corrective Action(s):
Clean all areas listed above. Ensure to properly sanitize all food contact surfaces and equipment.

Cold water for left faucet at 3-compartment sink was turned off.

Turn on cold water for faucet at 3-compartment sink. Ensure all sinks have both hot and cold water at all times.

Cardboard blocking hand sink near hot cooking area.

Remove cardboard from hand sink. Ensure all hand washing stations are unobstructed and easily accessible at all times.

Corrective Action(s):
Ensure all foods that have not been completely used are stored in a pest proof container and stored away from any potential contaminants.

Comments

Routine Inspection:
- All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All coolers (except for ice well holding bacon - see violation above) maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- All freezers maintained below -18 degrees Celsius (0 degrees Fahrenheit).
- Hot holding unit turned on and temperature maintained above 60 degrees Celsius (140 degrees Fahrenheit), however staff informed that foods are made to order and generally are not stored in the hot holding unit.
- 3-compartment sink available for manual warewashing.
- Concentration of QUAT sanitizer at dispenser, in buckets and spray bottle = 200 ppm.

Note: Ice machine is under repair due to a pipe blockage. Operator informed that the technician has already been working on the machine today. Ensure to discard any melted ice.
