Clean along the floor/wall junctions in hard to reach areas such as under the large manual dishwashing sinks.

Routine inspection of main kitchen:
Coolers are at 4C / 40F or colder.
Designated hand washing sinks have liquid soap and paper towels.
Temperature records are being kept for carts. Alcohol swabs available to sanitize probe thermometers.
Produce is washed.
Quats sanitizer 200ppm is available.
Dishwasher has a hot water sanitizing rinse (>71 C/160F at the plate; >180F at the gauge; temperature records are being kept using temperature stick).
Manual hot water was being reheated during inspection. Temperature records kept (180 F) - ok.
Re-set traps in the dry storage area.
* The cart washing room in the main kitchen is being renovated. The room is sealed off to prevent any contamination of the main kitchen /dishwashing areas. In the meantime, the carts are being cleaned and sanitized manually after use. No changes to the kitchen layout (floor plan submission to Public Health /Health Protection is not required).
