Observation: Food observed in open cardboard boxes on the shelves that have been chewed or have droppings in the boxes.
Corrective Action(s): Discard all contaminated food. Place ALL food and take out containers/forks/bags etc in plastic containers to ensure they are pest proof. Plastic bags are cardboard boxes are not sufficient to prevent contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Extensive amount of droppings observed on every shelf in the kitchen under the prep counters, on the base and arm on the mixer, around the flour buckets, around each freezer and cooler, under the back prep counter, under the dishwashing sinks. around the back door and storage shelves in the back, around the unused buffet table in the front.
Corrective Action(s): Clean and sanitize with bleach all areas where rodent droppings have been observed. Including all prep counters, all pizza pans, all equipment on the counter as well as all the areas listed above
Have a professional pest control company come in and provide a detailed report on the facility including how the rodents are getting in, level of activity and what can be done to preven more from gaining access. Provide this report to the Environmental Health Officer by email

Observation: All surfaces and equipment have been contaminated by rodents or their droppings.
Corrective Action(s): Thoroughly clean and sanitize with bleach all counters, shelves, equipment (mixer, dough sheeter etc), pizza pans, knives, outsides of storage containers, fridges, any food stored in containers made of plastic cans.

Observation: Cardboard boxes and plastic grocery bags being used to store food as well as take out containers.
Corrective Action(s): Purchase plastic containers with tight fitting lids to place all food (flour, onions, spice, pasta noodles, sauce packets, spice bottles etc) in to prevent contamination.
Also purchase plastic containers with tight fitting lids for all take out containers, plastic cutlery, napkins, take out bags etc to prevent contamination.
