Routine inspection conducted and the following were noted:
All hand washing stations satisfactory
All cooler units at 4C or below
Freezer unit at -18C.
All food items stored at least 6 inches off the ground and properly covered.
low temperature dishwasher achieved a final rinse concentration of 100ppm. Ensure unit is tested daily with chlorine test strips.
Chlorine sanitizing solutions was prepared at the of inspection. Concentration was a 100ppm. Ensure all wiping rags are stored in solution when not in use.
General cleaning was satisfactory;however, more thorough cleaning in hard to reach areas such as underneath cook line, underneath shelving units, and back stand-up coolers.
