Observation: Fly tape noted in three places in kitchen area (above handsink, dish sink and sandwich press unit). Many house and fruit flies noted.
Hand towels and/or dish cloths hanging in several locations in kitchen. Reuse a potential hand contaminant.
Corrective Action(s): Remove fly traps and look to alternate meaning of control in food prep areas.
Store cloths in sanitizer water (1/2 tsp bleach to 1 litre water for 100 ppm solution) and change every 2 hours or less. Only air dry dishes.

Observation: Handwash station observed with broken/missing cold water faucet. Part on order.
Ice machine not cycling through self clean properly as discussed. Observed moderate build-up of biomat on and around ice tray. Risk for contamination of ice. Ongoing issue.
Corrective Action(s): Fix handwash unit as discussed. Take and send picture when completed.
Service unit by technician as discussed AND perform manual cleaning and disinfection of unit. Remove all observable biomat from ice making and reserviour area as discussed. Take picture and send.

Dishwasher working (measured at 74 C at plate) but make sure unit is properly warmed up (including the wash water temperature) as indicated by the gauges and manufacturers instructions prior to use with dishes.
