Observation (CORRECTED DURING INSPECTION): Internal temperature of taquitos in hot holding unit at 37 to 55 degrees C.
Corrective Action(s): Taquitos were discarded by the operator at the time of inspection (27 total). The unit was at the wrong setting, according to the operator. Please ensure that all potentially hazardous foods are maintained at internal temperatures of 60 degrees C or more to limit the growth of potential pathogens and/or toxins. Unit is not to be used until it is able to maintain these temperatures.

Production area:
- Left cooler at 1 degree C
- Right cooler at 2 degrees C
- Freezer at -18 degrees C

Front area:
- Internal temperature of hot held foods (small and large cases) at 60 degrees C or more
- Pizza cooler and taquito cooler at 3 degrees C
- Small freezer at -17 degrees C

General:
- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Quats sanitizer available in labeled spray bottle (production) at 200 ppm. *Note: Sanitizer is measuring 400 ppm quats from dispenser and in bottle at front service area. Operator provided a copy of a work order that has been placed to adjust the dispenser to 200 ppm.
- 3 sink plugs available for manual ware washing. Staff aware of proper procedure.
- Temperature logs available. NSF probe thermometers and alcohol wipes available.
- General sanitation good. Food is stored off the floor. No evidence of pest activity noted at time of inspection.
