Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available for kitchen. 200ppm chlorine was prepared by the chef and all food prep surfaces were sanitized at this time.
Corrective Action(s): Ensure to have 200ppm chlorine solution available and all food prep surfaces sanitized BEFORE initiating any food prep in the morning, as well as after each possible contamination and every 2 hours during operation.

Observation: One dead cockroach was observed by the mop bucket at the back. Professional pest control company contracted.
Corrective Action(s): Ensure to keep the floors free of food debris and water and continue to monitor for pest activity.

Observation: The following areas require better and more frequent cleaning:
- Floors throughout
- Undercounter shelves in kitchen

Observation: Glasswasher has not been in use as it requires a repair. All glassware have been taken back to the dishwasher for washing.
Corrective Action(s): Ensure to have the glasswasher repaired and contact the health inspector to notify.

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
- Hot-holding units operating above 60'C.
- 200ppm chlorine solution available in buckets.
- High temperature dishwasher achieved 71.4'C at the plate level after final rinse.
- Ice machine satisfactory. Scoop stored in proper manner. Front Bar satisfactory.
