All coolers were < 4 C.
Freezers were < -18 C.
Hot holding was > 60 C.
Invoices for fish kept on site.
The dishwasher reached 74 C at the plate level.
Pest control report reviewed during the inspection. Ensure that entry points for rodents are checked for often and sealed.
