Comments

All hand washing stations supplied with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers maintained at or below 4C.
- Walk-in freezer maintained at -20.8C.
Note: No hot holding at the time of inspection. Ensure temperature for hot holding is maintained at or above 60 C.
Thermometers present in all cold holding units. Probe thermometers available onsite.
General food storage very good at the time of inspection:
- All food items covered and protected from contamination.
- All food items stored at least 6 inches off the floor.
- Storage rooms organized.
High temperature dishwasher sanitizing with 71C at dish level.
QUAT sanitizer in all spray bottles and pump dispenser = 200 ppm.
Ice machine maintained in a sanitary condition.
No signs of pest activity at the time of inspection. Traps are set and empty.
Ventilation canopy maintained in a sanitary condition.
Washroom clean and sink supplied with liquid soap, paper towels and hot/cold running water.
All tools, equipment and utensils stored and maintained in a sanitary condition.
General sanitation - good.
