Corrective Action(s): Wash dishes in first comparment sink with soap and warm water, rinse (may use dishwasher for rinse if preferred), soak in sink with bleach solution, at least 100ppm residual bleach (one ounce bleach to one gallon water). Then air dry.

Comments

Follow up to routine inspection dated March 29th, premises was closed when follow up attempted April 11.

Freezer has been repaired, no longer dripping on food.

Observed white residue around and inside dishwasher during the follow up inspection. White residue is indicative of mineral deposits from hard water and can lead to breakdown of equipment.
Tested the dishwasher Chlorine residual and there was no chlorine in the final rinse (0ppm residual). Have the dishwasher serviced to ensure at least 50ppm residual chlorine.
Check with dishwasher repair service for options in reducing build up of mineral deposits and clean the dishwasher regularly to remove build up.

Operator to continue washing dishes manually with a final sanitizing step (soak dishes for at least 2 minutes in a bleach solution of 100ppm residual - one ounce per gallon water)
