Observation (CORRECTED DURING INSPECTION): Pot of cooked gravy registered at 46C and was made approximately 1-2 hours ago. Operator informed that proper cooling procedures are not applied
Corrective Action(s): Ensure all foods are cooled from 60 - 20C in 2 hours and 20 - 4C within 4 hours. discussed proper cooling methods with the operator

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher registered at 0ppm residual chlorine during final rinse.
Corrective Action(s): Repair/service dishwasher so that it is registering 50-200ppm chlorine during final rinse. In the interim manually sanitize all dishes with 100-200ppm chlorine
