Observation: Facility had a build up grease, dirt and debris throughout the kitchen.

Routine Inspection:

- Hand sink had hot/cold water available, liquid soap and paper towel *Ensure all paper towel dispensers have adequate paper towel and are correctly working*
- Upright cooler was 4C or lower
- Upright freezer was -18C or lower
- Upright cooler in the corner of the kitchen was not working during inspection - dry goods and non-potentially hazardous foods were stored in there for the time being
- Hot hold unit was 72C
- Low temperature chemical dishwasher had 50ppm of chlorine at plate surface - operator had test strips available
- Upright cooler/freezer near the serving area was 8C - was going through a defrost cycle during inspection
- 200ppm chlorine available in spray bottle for sanitizing purposes
- No pest activity observed during inspection
