Observation: Sanitizer spray bottle is nearly empty and was not able to detect bleach or QUATs sanitizer when tested. Operator informed that overnight staff usually makes sanitizer to the approved concentration.
Corrective action: Fill spray bottles with sanitizer at the approved concentration (bleach at 100ppm and/or QUATs sanitizer at 200ppm). Ensure to follow the sanitation plan for proper concentrations.
Health rationale: Food contact surfaces must be sanitized using the proper concentration to reduce bacteriological contamination.

Corrective action: Replace the scoops with dispensers that have handles and place them in a separate container. Ensure to prevent dispensers/handles directly touching food.

Routine inspection conducted.
1. Temperatures
Upright fridge at 3.3C
Freezer at -10C
Domestic dishwasher is being used. Temperature logs of the dishwasher is maintained and up to date. Ensure follow the temperature and procedure outlined on the sanitation plan.

2. Sanitation
All handwashing stations are accessible and equipped hot & cold running water, liquid soap and paper towels.

3. Storage
Food items stored above floor at least 6 inches.
All food items are covered in the fridge.

4. Pest activity
No visual sign of pest activity observed during inspection.

5. Administrative
Permit posted

NOTE: Ensure to notify the district EHO if any change are to be made to the domestic dishwasher.
