All fridges in kitchen and storage room are maintaining foods at 4 degrees Celsius or colder. All freezers are -18 degrees Celsius or colder. General sanitation is overall good. Dishwasher final rinse reached 71 degrees Celsius at the plate surface . Quat sanitizer had a 200 PM residual. Ensure that temperatures of fridges and freezers are being monitored and recorded daily.
