Follow up inspection.
All outstanding issues have been corrected:
The food safety plan and sanitation plan were available on-site. Cooking, hot holding, and refrigeration temperatures and the corrective action was reviewed.
Hot-held food was 60 degrees C (140 degrees F) or hotter.
Sushi rolls were placed on a top insert of the cooler that had a sneeze guard. The sushi chef was keeping track of the time that the various sushi rolls were prepared. Documentation indicated that they were selling out within 15-30 minutes (within 2 hours). Continue keeping track of time-temperature for the sushi rolls; this will be checked during your next inspection as well.
The small cooler near the sushi bar was 4 degrees C or less.
The light bulb in the dry storage area was changed to a brighter bulb. The owner had a flashlight on-site as well to check the floor for sanitation/signs of pest activity.
