Observation (CORRECTED DURING INSPECTION): Surface sanitizers stored in spray bottles measured 0ppm QUAT concentration in both bars. The dispenser in the chemical storage room from which the sanitizers are obtained was not connected to any sanitizer bottle/or sanitizer source.
Corrective Action(s): The operator prepared new sanitizer in spray bottles at 200ppm QUAT concentration. Provide a fresh bottle of sanitizer and properly connect to the dispenser in the chemical storage room. You must have backup sanitizers in case of shortage. Monitor the concentration of QUAT sanitizer daily with appropriate test strips. In the meantime, the following sanitizers are approved for food contact surfaces:
- 100ppm chlorine bleach
- 200ppm quaternary ammonium compound (QUAT)
This will be verified during the next follow up inspection.

Two tasting rooms on site.
- High temperature dishwasher shared among the two bars in the back kitchenette area.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.

Bar #1 (right from the entrance door):
- General sanitation is good.
- Handwashing station supplied with hot/cold running water, paper towels. Please provide hand soap for washing hands instead of dish detergent.
- All coolers at < or = 4C
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection.
