Observation: Rodent droppings observed on two lower shelves, Bottom two shelves of storage rack, floor under one shelf and floor surrounding hot water tank and back door.

Corrective Action(s): Follow up inspection to occur this Friday. Remove all items from floor surrounding back door and hot water tank. Clean and sanitize floor and lower shelves with 200ppm Chlorine solution (1 tablespoon bleach for 1 gallon of water).

- Dishwasher achieving final sanitizing rinse of greater than or equal to 72 (80) degrees Celsius at the dish
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm Chlorine
- Proper thawing techniques observed
- Ice machine and scoop in good sanitary condition
- Raw meat stored away from Ready to Eat food items


NOTE: Obtain sink plugs at facility. Minimum 2 sink plugs.

NOTE: Do not allow infestation to continue. Increase cleaning frequency of floor and lower shelves. Any droppings found in dishes or food OR a severe infestation will result in an automatic closure of facility from Health Department.
